  • Identify the types of ingredients and the functions of ingredients
    • Different types of flour, its uses and key specifications
    • Role of salt and sugar in bread
    • Improvers in rich dough and lean dough
    • Dough improvers and conditioners (natural and chemicals)
    • Science and mathematical calculation when using improvers
  • Explore different methods and concepts of Bread Making and how to convert them for better flavour
    • Straight Method
    • Direct Method
    • Pre- ferment method of sponge dough, old dough/ pate fermentee, poolish 
  • Practice scoring and shaping technique on bread
  • Formulate and calculate master sponge formula 
  • Learn substitutes of bread making 
    • Sugar 
    • Dairy 
    • Flour
  • Practice kitchen etiquette and handling of tools and equipment

UTAP Funding

Get additional funding for NTUC members

1. NTUC members are able to claim 50% of the unfunded amount
2. For e.g. if the course is $500 and you are only able to claim $200 from Skillsfuture, 50% of the remaining $300 will be funded by UTAP
