Discover the art and science of cake making in this intensive training to have you mastering the skill. Gain a strong foundation in the theory and practical elements of cakes and you’ll be able to craft your recipes while being able to improve the existing recipes out there to suit any occasion. At the end of it, you put all that you’ve learnt to the test in a theory and practical assessment and you’ll be deemed ready to embark on the journey of being a Professional in the Art and Science of Cake.

Course Outline

  • Selection and functions of ingredients
  • Building blocks of a gateau / layered cake
  • Production of bases e.g. sponge layers, jaconde, dacquoise
  • Importance of hygiene
  • Importance in temperature control 
  • Production of fillings e.g. Crème patisserie, chiboust, cremeux, diplomat cream, Bavarian, Mousseline creams, chocolate and fruit mousses
  • Techniques in assembling the various building blocks
  • Techniques in glazing with shiny glazes and chocolate glazes 
  • Production of effective chocolate decorations suitable for the pastry shop
  • Tips and techniques in decoration with arrangements of fresh fruits
  • Bakers’ Mathematics, an important element in recipe creation and troubleshooting of errors
  • Plain cakes, e.g. cheesecakes, muffins and wholesome cakes with a longer shelf life
  • SOPs in the production of products, storage and shelf life
  • Exploration of healthier choices

  • Fees include all training materials and ingredients
  • A Certificate of Accomplishment will be given upon completion of each module
  • Participants will take home products made during the course
  • Takeaway boxes will be provided according to the products made. Additional boxes requested are chargeable
