Focusing on the art of presentation, this course is designed to help you master the art of cake decoration. Baking cakes definitely requires skill but decorating them is an entirely separate arform. Learn how to work with various types of buttercream and practice the act of piping delicious and consistent buttercream to form all types of decorative elements to elevate the look of your cake creations. At the end of it, you put all that you’ve learnt to the test in a theory and practical assessment and you’ll be deemed ready and confident to embark on the journey of being a Professional in Cake Decorations.

Course Outline

  • Making of  Italian, German, French and Korean buttercreams and commercial buttercreams
  • The preparation of fresh cream, chocolate, chocolate ganache and creams of assorted flavours
  • The preparation and selection of icing nozzles-the right tool for the right job
  • The preparation and selection of piping bags, including how to fold a paper piping bag
  • Understanding the mixing of colours
  • Analyse and improve on errors made during baking or piping 
  • The storage of creams and shelf life 
  • Hygiene practices and cleaning of icing tools
  • Practicing the techniques of piping the following: 
    • Rosettes
    • Shells
    • Inverted Shells 
    • Basket Weave
    • Dots
    • Curves and Inverted Curves
    • Roses
    • Petunias
    • Leaves 
    • Ferns
    • Fantasy Flowers
    • Figure /Animal piping
    • Chocolate Piping 
    • Messages and Letterings
  • Practice the techniques of creaming a cake: 
    • Crumb coating
