Fondant work takes centrestage in this course, as you learn how to work with fondant and gum paste to decorate your cakes. Learn from the experts as they teach you how to assemble and decorate a multi-layered cake with beautiful flower creations and fondant painting during this 3-day session. At the end of it, you put all that you’ve learnt to the test in a theory and practical assessment and you’ll be deemed ready and confident to embark on the journey of being a Professional in Cake Decorations.

  • Making of a quick sugarpaste for tiered wedding cakes
  • The pros and cons of using a commercially available sugarpaste
  • The techniques of 
    • covering a real cake
    • supporting the various tiers
    • wiring and shaping of small filler flowers (E.g. Stephanotis, Lilies of the Valley)
    • colouring and shading the flowers to achieve a realistic effect
    • making, shaping and thinning petals for making realistic roses
    • preparing the cake boards
    • Making of buds and centres for roses
    • Making of rose leaves and techniques in veining
  • The preparation of royal icing and using it to create cornelli lace and scrolls on the cake
  • The assembly of roses and calyx
  • The assembly of flowers into sprays (freesias  and assembling of stamens): techniques in wiring and design principles.
  • The different types of pillars and how to attach the top tier cake to the bottom tier
  • The use of inverted wine classes as pillars
  • Proportion and balance in tiered wedding cakes
  • Techniques in the making of royal icing and piping 
  • Filigree and brush embroidery
  • Creating “ flow” in design
  • Painting on fondant
  • Tips for transportation of cake 
  • Costing of cake: how much to sell the cake for?
  • Tips on cake bases and keeping them fresh
