Masterclass week seeks to inspire the industry professionals to continue to hone their technical skills through learning from renowned Chefs from all over the Asia Pacific region. Under Chef Nogami, they will learn a variety of Taiwanese and Japanese Methods of making breads. They will explore global trends, delve into the art and science of baking and learn to streamline business processes and operations to produce large-scale commercial production.

About Chef Nogami

Chef Nogami Tomohiro embarked on his bread-making journey in Okayama Prefecture, Japan, 1966. He honed his craft at Kimuraya before venturing to branches of DONQ Bread. In 1991, he brought his expertise to Taiwan and opened his own bakery in Taichung.

He gained fame for his “instantly sold out bread” at Boulangerie Nogami and expanded to a second branch in Taipei in 2012. As head coach of the Taiwan team in Coupe De Monde La Boulangerie, he led the team to win third place. In 2013, he also established Nogami Workshop, collaborated with Daiyamilling Co., Ltd. in 2014 to develop flours and founded Mairangi Bakery. His commitment to share knowledge led to the publication of “Nogami Tomohiro’s Bread Complete Illustrated Guide”. As the founder of Nogami Bakery and Mairangi Bakery, Chef Nogami’s legacy extends worldwide, earning him consultancy roles with renowned companies.
